I need to know how much water and how much oil level should be I need this info urgently. Im a regular customer purchase several pieces of different equipment and need some answer immediately

I currently own a fried chicken restaurant in the Tahoe area and wanted to see if this would be something we could switch to. If we switch then I would need to purchase at least three fryers. Do you have any contact names that I would be able to reach out to? Thanks for your help.
